Meet John Ruibal, Dietitian and Food Service Manager

This week, Prowers Medical Center is proud to introduce you to John Ruibal, our Dietitian and Food Service Manager, who has been with PMC for eight years.

John’s role is central to patient care—he oversees nutritional services for inpatients, outpatients, guests, staff, and even vending. His focus is on ensuring that every meal and nutritional plan meets the highest standards, supporting recovery, health, and wellness at every level.

When asked about his favorite part of working at Prowers Medical Center, John didn’t hesitate: it’s all about people. He loves coaching, teaching, and mentoring his team, guiding them to uphold best practices and deliver compassionate, effective care to the patient population.

Outside of work, John has a true passion for running. A former collegiate athlete at Colorado State University, where he ran track and field and cross country, John continues to stay active in the sport he loves. He competes in races all over the world, attends CSU football games as a devoted Ram fan, and leads a local running group in Lamar—bringing people together through fitness and shared goals.

John’s career path is also shaped by his extensive service and teaching experience. He proudly served 28 years in the U.S. Army, taught Dietetic students at Baylor University, and continues to share his knowledge by teaching a nutrition class at Lamar Community College during the fall and spring semesters. With more than 35 years of experience coaching running groups, John’s dedication to education, mentorship, and wellness extends far beyond the hospital walls.
